How do I strip plastic models? Without destroying them? If you say Simple Green, please assuage my concerns with some details like soaking time, post-soak prep, watering it down, etc.

Simple Green and Purple Power or Power Clean (from Wal Mart in the auto dept). I actually think Power Clean is the best for plastic. Leave for 24 hours and strip.
You don't need to water down any of the materials either. I have left it in for 24 hours and in for 24 days and they don't eat the plastic.

I use simple green because its the cheapest and as long as you can spare some time works great All you need to do is soak for 30 hours (depending on how many layers of paint are on the models) then get a tooth brush that you don't use and scrub away the paint. Most of it should come right off except for stuff in cracks but once you scrub it it'll all come off. If there's multiple layers of paint then repeat the process untill you get down to primer. THen soak in warm (preferably anti grease) soapy water for fifteen minutes, then air/drip dry (I just use a hair dryer works like a charm) then paint!

Cool. The paint's not too thick on the models now, but I'm a four-coat layer guy, so it will get pretty thick. Thanks guys.
